I am a high school engineering teacher attempting to use SimScale to simulate a mini wind turbine in a wind tunnel. Is this possible?

Yes, this is very possible in SimScale.
You conduct an incompressible CFD simulation using rotating zones for this, check out this tutorial on simulating a drone, which have many similar workflow to your wind turbine simulation.
Additionally, I would highly recommend you to simplify the CAD geometry, currently your model consist a lot of holes (screw holes - see attached image) which may be physically right, however aerodynamically these holes does not provide any significant effect, hence can be neglected. Computationally, those holes only make the mesh to be more complex around those region and hence increase computational cost.
